The "Everything" Salad

This Summer “Everything” Salad is a must-have for your work week. 

Why It’s Wild: This salad is a powerhouse source of vitamins, fiber and phytonutrients - everything you need to keep your:

-Liver clear
-Gut motility in the green
-Energy levels boosted
-Immune system supported

Tomatoes are rich in lycopene, a heart-protective hydrocarbon that gives them their red color. 

Avocado provides the gut with a healthy supply of short chain fatty acids that feed beneficial bacteria. 

Red cabbage contains magnesium, calcium and zinc - vital for healthy skin and bones. 

Carrots are rich in lutein and beta-carotene, while zucchini is an excellent source of vitamins C & A and folate - all essential nutrients for vision, digestion and liver function. 

Olive oil is a healthy emulsifier that can help ease digestion and has been linked to better visual memory and decreased risk of dementia and Alzheimer’s. 

Ingredients

Salad:

  • 1 cup bib or Boston lettuce
  • 1/2 a zucchini, shredded or spiralized
  • 1 cup cherry tomatoes, halved
  • ½ an avocado, sliced
  • 1 large carrot, shredded
  • ½ cup red cabbage, shredded*
  • ½ cup walnuts, pecans, pumpkin or sunflower seeds (your choice)
  • Sprinkle of pomegranate seeds, or berry of your choice

Dressing:

  • 1 tsp salt
  • 1/2 tbsp black pepper
  • ½ tbsp French mustard
  • ¼ cup extra virgin olive oil
  • ¼ cup fresh or dried herbs of your choice

To Make:

In a large bowl, arrange all salad ingredients as desired. Top with nuts, seeds or berries of your choice. 

In a small decanter or bowl, add all dressing ingredients and whisk until combined. 

Serve dressing over salad, to taste. 

Serves 1 to 2. Enjoy!

*If you are a low-sulfur Wildatarian, substitute cabbage for diced or shaved cucumber.
