Tonight it was a comfort meal night. But comfort food does not have to be unhealthy. I prepared lentils over wild rice with sauteed swiss chard, and portobello mushrooms with toasted walnuts in a rosemary and thyme sauce, and caramelized onions, paired with roasted brussels sprouts and roasted butternut squash and sweet potato. Heavenly and so comforting. Rich in protein, healthy fats, beta carotene and vitamin K. Food for thought and for our comfort
