No need for animal meat in this complete protein meal

The brown rice pasta and chickpeas have complementary amino acids which form a complete protein. Paired with asparagus, garlic, black olives, mushrooms, bell peppers, fresh parsley and tomatoes, and topped with feta, this meal was simply delicious and incredibly nutritious. Made it up from items in my pantry and refrigerator after working late last night when it was too late to defrost any chicken. I think I’ll make it again. YUM!
