Many slather mayonnaise on bread, slap some meat between the two pieces and call it a sandwich. This was our lunch today.
I used avocado and spread it on the 7 grain bread. I paired it with yellow heirloom tomatoes, brie, fresh mozzarella cheeses and fresh spinach. I added olive oil, sea salt and fresh cracked pepper. Fresh mango chunks added color to my plate.

Avocado, Tomato, and Hummus Wrap
Assembling ingredients is all that is necessary. There is no need to turn on your oven or stove top. This is one of my favorite wraps when I am traveling. I put the ingredients in a cooler then at lunch time, I just wrap and roll! No need to make the “drive of shame” (as coined by one of my clients) to a fast food establishment. The avocado gives us good fats and oils and helps to metabolize excess estrogen in the body. Hummus is a protein source; the tomatoes supply ample antioxidants; and the cucumbers are a cooling vegetable, rich in silica which supports healthy, hair, bones, and tissue.
Serves 1
1/2 small California avocado, peeled and pitted
1/2 teaspoon olive oil
2 tablespoons hummus, any variety
1 whole grain tortilla
4 slices cucumber
4 to 6 grape tomatoes, halved
Sea salt
Freshly ground black pepper
In a medium bowl, mash avocado; mix with olive oil. Spread avocado and hummus evenly on the tortilla. Top with cucumber slices and tomato halves. Season with salt and pepper to taste. Roll wrap into a cylinder.
Serve with fresh fruit or salad greens.
As a variation you can add 1/4 grilled chicken breast, sliced then proceed with instructions as detailed.
