No need for food dyes  – easy to make homemade coloring from natures bounty beets

My daughter wanted to make cupcakes last night and wanted to use food dye. I said no way, so I took beet stalks, cut them up and boiled in water for a few minutes. I discarded the stalks and added shredded coconut – it soaked up the color nicely. Then we placed the shredded coconut on foil and placed in a warm oven to dry the coconut. This was the result.
