Yesterday was one of those very busy days including an after work dinner with a friend. That did not stop me from making dinner for my family. Black beans in a pressure cooker with garlic and onion, and yellow and red beets in water to boil took all of 5 minutes. I prepped this meal before I had breakfast yesterday then went on to my morning run and getting ready for my day.

They were cooked before I started my work day!

Tonight I am using the leftovers with my herbed roasted turkey breast. So easy, I did not even feel I was preparing dinner. Great to have that off the checklist before the start of my day.
